- 1 cup egg whites
- 1/2 cup cottage cheese
- 1/4 cup chopped vegetables (like bell peppers, spinach, or onions)
- 1/4 cup shredded cheese (optional)
- Salt and pepper to taste
- Non-stick cooking spray
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the egg whites and cottage cheese until well combined.
- Stir in the chopped vegetables and cheese, if using.
- Season the mixture with salt and pepper.
- Lightly grease a muffin tin with non-stick cooking spray.
- Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 15-20 minutes or until the bites are firm and lightly golden.
- Allow to cool for a few minutes before removing from the tin.
- Enjoy warm or store them in the fridge for a quick snack!
