Ingredients
1 to 1.5 pounds chicken thighs or breasts, trimmed
1/4 to 1/3 cup honey
1/4 cup soy sauce (regular or low sodium)
3 cloves minced garlic (or 1 tablespoon jarred)
1 to 2 tablespoons olive oil for frying
Optional: ginger, fresh or powdered
Optional: green onions for garnish
Optional: cornstarch for thicker sauce

Instructions
Season chicken with salt and pepper. Pat chicken dry to ensure browning.
Heat olive oil in a non-stick skillet over medium-high heat. Cook chicken for 6-8 minutes on each side until golden and cooked through.
Combine honey, soy sauce, minced garlic, and optional ginger in a bowl and stir until well mixed.
Remove chicken from pan, pour sauce mixture into skillet and simmer for 2-3 minutes until slightly thickened.
Return chicken to pan, coat in sauce, and serve garnished with green onions over rice or vegetables.
