  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil, plus extra for drizzling
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Start by peeling and cubing the sweet potatoes into roughly 1-inch pieces. Trim the ends off the green beans and wash them. Pat the chicken breasts dry with a paper towel. Preheat your oven to 400°F (200°C).
  2. In a small mixing bowl, whisk together the honey, soy sauce, minced garlic, 2 tablespoons olive oil, paprika, dried thyme, salt, and black pepper until the sauce is smooth. Place the chicken breasts in a shallow dish and pour half of the honey garlic mixture over them. Turn to coat and marinate for at least 30 minutes.
  3. Spread the cubed sweet potatoes on your lined baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat. Roast for about 15 minutes.
  4. Remove the baking sheet from the oven. Arrange the marinated chicken breasts on one side of the sheet and tuck the green beans around them. Drizzle the remaining marinade over the chicken and vegetables. Bake for 20-25 minutes until the chicken reaches 165°F (74°C).
  5. Once cooked, remove the sheet pan from the oven and let the chicken rest before slicing. Serve with roasted sweet potatoes and green beans.

Notes

Marinate the chicken longer for deeper flavor. Ensure sweet potatoes are cut evenly for even roasting. Broil for a crispier chicken exterior if desired.
