1 cup Cottage Cheese (full-fat for creaminess)
2 tablespoons Olive Oil (or avocado oil)
1 large Egg (or ground flaxseed mixed with water for vegan option)
1 cup All-Purpose Flour (or almond flour for gluten-free option)
1 teaspoon Baking Powder
1 teaspoon Salt (sea salt preferred)
2 cups Baby Spinach (finely chopped; kale can be substituted)
1 cup Shredded Mozzarella Cheese (or feta for a tangier flavor)

Preheat the oven to 375°F and line a baking sheet with parchment or lightly oil it.
Pulse the cottage cheese and egg together in a blender until mostly smooth.
Transfer the cottage cheese mix to a bowl and stir in olive oil. Add baking powder and salt, mixing until combined.
Fold in the flour gradually until a sticky dough forms; adjust with more flour if too sticky.
Stir in chopped spinach and shredded mozzarella until evenly distributed.
Divide dough into 6 equal portions, shape into balls, and press a hole through the center.
Place bagels on the prepared sheet, brush with olive oil, and sprinkle with extra cheese if desired.
Bake for 18 to 22 minutes until golden and firm. Cool on a rack for 5 minutes before slicing.
