Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment or lightly oil it.
- Pulse the cottage cheese and egg together in a blender until mostly smooth.
- Transfer the cottage cheese mix to a bowl and stir in olive oil. Add baking powder and salt, mixing until combined.
- Fold in the flour gradually until a sticky dough forms; adjust with more flour if too sticky.
- Stir in chopped spinach and shredded mozzarella until evenly distributed.
- Divide dough into 6 equal portions, shape into balls, and press a hole through the center.
- Place bagels on the prepared sheet, brush with olive oil, and sprinkle with extra cheese if desired.
- Bake for 18 to 22 minutes until golden and firm. Cool on a rack for 5 minutes before slicing.
