Instructions
Prepare lamb by marinating it with olive oil, herbs, and spices. Toss lamb with olive oil, minced garlic, chopped mint, and parsley plus cumin, coriander, salt, and pepper. Let it sit at least an hour or overnight.
Roast or grill the lamb until cooked through. Heat your oven or grill and cook until nicely browned. Rest the meat for five to ten minutes before slicing.
Serve with fresh pita bread or unleavened bread. Warm the bread slightly and pile it on the table.
Prepare a fresh salad using cucumbers and tomatoes. Chop tomatoes and slice cucumbers, add lemon juice, olive oil, salt, and pepper, and toss.
