Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 2 ripe California avocados
  • 2 medium fresh tomatoes
  • 3 tablespoons fresh lime juice (about 2 limes)
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt (adjust to taste)
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. In a bowl, whisk together the lime juice, olive oil, minced garlic, ground cumin, salt, and black pepper to create a simple marinade.
  2. Place the chicken breasts in a shallow dish or resealable bag. Pour the marinade over the chicken, turning to coat each piece well.
  3. Preheat your grill to medium-high heat. Oil the grill grates lightly to prevent sticking.
  4. Grill the marinated chicken for about 6–7 minutes per side, or until fully cooked through.
  5. While the chicken is grilling, slice the avocados and dice the fresh tomatoes.
  6. Once the chicken reaches 165°F, top each breast with avocado slices and a spoonful of diced tomatoes.

Notes

  1. For extra depth, add a teaspoon of smoked paprika to the marinade. Let the chicken rest for 3–5 minutes after grilling.
