Ingredients
1 cup rolled oats
1/4 cup almond butter or any nut butter
1/4 cup honey or maple syrup
2 tablespoons lemon juice
1 tablespoon lemon zest
2 tablespoons poppy seeds
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 cup chopped nuts or seeds (optional)

Instructions
In a large bowl, combine all the ingredients and mix until well combined.
If the mixture is too dry, add a little more almond butter or honey until the mixture sticks together when pressed.
Form small balls about 1 inch in diameter.
Place the energy bites on a baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to firm up.
Store in an airtight container in the refrigerator for up to a week.
Notes
For extra flavor, use fresh lemon zest. They can be frozen for longer storage.
