Description

Quick and easy no-bake lemon poppy seed energy bites that are chewy, tangy, and energizing.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/4 cup almond butter or any nut butter
  • 1/4 cup honey or maple syrup
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons poppy seeds
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. In a large bowl, combine all the ingredients and mix until well combined.
  2. If the mixture is too dry, add a little more almond butter or honey until the mixture sticks together when pressed.
  3. Form small balls about 1 inch in diameter.
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.

Notes

For extra flavor, use fresh lemon zest. They can be frozen for longer storage.
