Quick and easy no-bake lemon poppy seed energy bites that are chewy, tangy, and energizing.
Ingredients

- 1 cup rolled oats
- 1/4 cup almond butter or any nut butter
- 1/4 cup honey or maple syrup
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons poppy seeds
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped nuts or seeds (optional)
Instructions
- In a large bowl, combine all the ingredients and mix until well combined.
- If the mixture is too dry, add a little more almond butter or honey until the mixture sticks together when pressed.
- Form small balls about 1 inch in diameter.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
Notes
For extra flavor, use fresh lemon zest. They can be frozen for longer storage.
