Limoncello Marmalade: A Bright and Zesty Citrus Spread to Start Your Day

Ingredients

  • 5 cups chopped citrus
  • 1/2 cup limoncello
  • 1/2 cup water
  • 1 tablespoon stick butter
  • 1 box powdered pectin
  • 7 cups sugar

Instructions

  1. Fill blender with chopped citrus up to the 5-cup line and lightly smash it down.
  2. Add limoncello and water; top off with more citrus if needed to reach 5 cups.
  3. Add butter and pectin to the blender and blend until well combined.
  4. Transfer mixture to a stockpot and bring to a boil over high heat.
  5. Once boiling, add sugar and stir until fully dissolved.
  6. Continue stirring until the mixture reaches a rolling boil, then boil for 90 seconds.
  7. Remove from heat and carefully ladle into sanitized jars.
  8. Seal jars and process in a boiling water bath for 10 minutes.
  9. Let jars cool at room temperature for 24 hours before using.

Notes

  1. Use a mix of citrus fruits for a more complex flavor. Ensure jars are fully sterilized before filling. Let the marmalade cure a few days for best flavor.
