Ingredients

  • 4 large potatoes, cubed
  • 1 pound ground beef or turkey
  • 1 tablespoon taco seasoning
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 cup shredded cheese
  • Sour cream, optional
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste
  • Olive oil, for roasting and browning

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cube the potatoes, then toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes, or until crispy.
  3. In a skillet over medium heat, brown the ground meat. Once cooked, add taco seasoning and mix well.
  4. In a large bowl, combine the roasted potatoes, seasoned meat, black beans, corn, and diced bell pepper.
  5. Serve the mixture in bowls, topped with cheese, avocado, and optional sour cream.

Notes

  1. For a crunchier texture, broil the potato cubes for a minute at the end of roasting, but watch closely.
