Ingredients
1 pound ground beef
1 packet taco seasoning
1 cup shredded cheese (cheddar or Mexican blend)
1 cup diced tomatoes
1 cup bell peppers (diced)
1 cup cauliflower rice (or other low carb alternative)
Sour cream (for serving)
Chopped green onions (for garnish)
Lettuce (for serving)

Instructions
Preheat
the oven to 350°F (175°C).
Brown
the ground beef in a skillet over medium heat. Drain excess fat.
Stir

Top
with diced bell peppers and shredded cheese.
