Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced tomatoes
  • 1 cup bell peppers (diced)
  • 1 cup cauliflower rice (or other low carb alternative)
  • Sour cream (for serving)
  • Chopped green onions (for garnish)
  • Lettuce (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  3. Stir in the taco seasoning and diced tomatoes. Cook for a few minutes until heated through.
  4. Layer the cauliflower rice, then the beef mixture in a greased casserole dish.
  5. Top with diced bell peppers and shredded cheese.
  6. Bake for 20 minutes or until the cheese is melted and bubbly.
  7. Serve with sour cream, green onions, and lettuce.
