Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Stir in the taco seasoning and diced tomatoes. Cook for a few minutes until heated through.
- Layer the cauliflower rice, then the beef mixture in a greased casserole dish.
- Top with diced bell peppers and shredded cheese.
- Bake for 20 minutes or until the cheese is melted and bubbly.
