Ingredients

  • 3 Tablespoons Oil
  • 1 Lb Ground Beef
  • 1 Sweet Onion (chopped)
  • 1 Orange Bell Pepper (seeded, chopped)
  • 3 Garlic Cloves (chopped)
  • 14 oz Can Fire Roasted Diced Tomatoes
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Dried Oregano
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • Salt/Pepper (to taste)
  • 1 Small Head Green Cabbage (cored, chopped)
  • 2 Cups Shredded Cheddar/Jack Cheese

Instructions

  1. Heat the oil in a large pan over medium high heat. Add ground beef, onion, and bell pepper. Cook until the beef browns and the onions are translucent.
  2. Add the chopped garlic and sauté for one more minute.
  3. Stir in the diced tomatoes and spices, mixing everything well.
  4. Top with chopped cabbage and cover. Cook for 15 to 20 minutes until cabbage is tender.
  5. Uncover and top with cheese. Cover again until cheese melts. Serve immediately.

Notes

  1. For extra flavor, consider swapping half the beef for pork or using spicy sausage. This recipe is forgiving and scales easily.
