Ingredients

  • 1 pound ground beef
  • 1/2 cup rice
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup zucchini, diced
  • 1 cup tomatoes, diced
  • 1/2 cup onion, diced
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, combine the ground beef, rice, egg, minced garlic, cumin, paprika, salt, and pepper. Mix well and shape into meatballs.
  2. In a large pot, bring the chicken broth to a boil.
  3. Gently add the meatballs into the boiling broth.
  4. Add the carrots, zucchini, tomatoes, and onion.
  5. Reduce heat and let it simmer for 20-25 minutes.
  6. Serve hot, garnished with fresh cilantro.

Notes

  1. For alternatives, use ground turkey or use quinoa instead of rice. You can also add spinach or kale for more nutrients.
