Ingredients
1 pound ground beef
1/2 cup rice
1 egg
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
8 cups chicken broth
1 cup carrots, diced
1 cup zucchini, diced
1 cup tomatoes, diced
1/2 cup onion, diced
Fresh cilantro for garnish

Instructions
In a bowl, combine the ground beef, rice, egg, minced garlic, cumin, paprika, salt, and pepper. Mix well and shape into meatballs.
In a large pot, bring the chicken broth to a boil.
Gently add the meatballs into the boiling broth.
Add the carrots, zucchini, tomatoes, and onion.
Reduce heat and let it simmer for 20-25 minutes.
Serve hot, garnished with fresh cilantro.
Notes
For alternatives, use ground turkey or use quinoa instead of rice. You can also add spinach or kale for more nutrients.
