Ingredients

- 1 pound ground beef
- 1/2 cup rice
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 8 cups chicken broth
- 1 cup carrots, diced
- 1 cup zucchini, diced
- 1 cup tomatoes, diced
- 1/2 cup onion, diced
- Fresh cilantro for garnish
Instructions
- In a bowl, combine the ground beef, rice, egg, minced garlic, cumin, paprika, salt, and pepper. Mix well and shape into meatballs.
- In a large pot, bring the chicken broth to a boil.
- Gently add the meatballs into the boiling broth.
- Add the carrots, zucchini, tomatoes, and onion.
- Reduce heat and let it simmer for 20-25 minutes.
- Serve hot, garnished with fresh cilantro.
Notes
For alternatives, use ground turkey or use quinoa instead of rice. You can also add spinach or kale for more nutrients.
