Meatball Soup

Ingredients

  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 egg
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 medium potatoes, diced
  • 1 medium zucchini, diced
  • 2 tablespoons chopped fresh cilantro (optional)
  • 1 lime, cut into wedges (optional)

Instructions

  1. In a large bowl, combine ground beef, cooked rice, egg, cumin, garlic powder, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, bring beef broth and diced tomatoes to a simmer over medium heat.
  3. Add meatballs to the pot and simmer for about 15 minutes, until cooked through.
  4. Add diced potatoes and zucchini, and cook until veggies are tender, about 10 more minutes.
  5. Stir in cilantro if desired.
  6. Serve hot with lime wedges on the side.

Notes

  1. You can use ground turkey or chicken as a substitute for ground beef. Feel free to customize the vegetables based on what you have on hand.
