- 1 pound ground beef
- 1 cup cooked rice
- 1 egg
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 medium potatoes, diced
- 1 medium zucchini, diced
- 2 tablespoons chopped fresh cilantro (optional)
- 1 lime, cut into wedges (optional)
Instructions
- In a large bowl, combine ground beef, cooked rice, egg, cumin, garlic powder, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring beef broth and diced tomatoes to a simmer over medium heat.
- Add meatballs to the pot and simmer for about 15 minutes, until cooked through.
- Add diced potatoes and zucchini, and cook until veggies are tender, about 10 more minutes.
- Stir in cilantro if desired.
- Serve hot with lime wedges on the side.
Notes
You can use ground turkey or chicken as a substitute for ground beef. Feel free to customize the vegetables based on what you have on hand.
