Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1/2 cup cooked rice
  • 1/4 cup chopped onion
  • 1 egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 2 potatoes, diced
  • 2 carrots, sliced
  • 1 zucchini, diced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Fresh cilantro for garnish

Instructions

  1. In a large bowl, combine the ground beef, cooked rice, chopped onion, egg, garlic powder, salt, and pepper. Mix well and form into meatballs.
  2. In a large pot, heat the beef broth over medium heat. Add diced tomatoes, potatoes, carrots, zucchini, cumin, and oregano.
  3. Bring to a simmer, then add the meatballs carefully.
  4. Cook for about 30 minutes until the meatballs are cooked through and veggies are tender.
  5. Serve hot, garnished with fresh cilantro.

Notes

  1. Feel free to substitute ingredients based on what's in your fridge. This soup is versatile and perfect for using up leftover vegetables.
