- 1 pound ground beef (or ground turkey)
- 1/2 cup cooked rice
- 1/4 cup chopped onion
- 1 egg
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 potatoes, diced
- 2 carrots, sliced
- 1 zucchini, diced
- 1 teaspoon cumin
- 1 teaspoon oregano
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine the ground beef, cooked rice, chopped onion, egg, garlic powder, salt, and pepper. Mix well and form into meatballs.
- In a large pot, heat the beef broth over medium heat. Add diced tomatoes, potatoes, carrots, zucchini, cumin, and oregano.
- Bring to a simmer, then add the meatballs carefully.
- Cook for about 30 minutes until the meatballs are cooked through and veggies are tender.
- Serve hot, garnished with fresh cilantro.
