Ingredients
1 cucumber, diced
2 tomatoes, diced
1 red onion, sliced
1/4 cup cilantro, chopped
Juice of 1 lime
Salt and pepper to taste

Instructions
Wash and prep your produce: dice the cucumber and tomatoes, slice the red onion, and chop the cilantro.
In a large bowl, combine the diced cucumber, tomatoes, sliced red onion, and chopped cilantro. Toss gently to mix.
Squeeze the juice of one lime over the salad, being careful not to get lime juice in your eye.
Add salt and pepper to taste, starting small and adjusting as necessary.
Toss gently to combine, ensuring the lime and seasoning reach every corner.
Drizzle olive oil if desired and serve immediately for best freshness.
Notes
