Ingredients

- 1 cucumber, diced
- 2 tomatoes, diced
- 1 red onion, sliced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
- Olive oil (optional)
Instructions
- Wash and prep your produce: dice the cucumber and tomatoes, slice the red onion, and chop the cilantro.
- In a large bowl, combine the diced cucumber, tomatoes, sliced red onion, and chopped cilantro. Toss gently to mix.
- Squeeze the juice of one lime over the salad, being careful not to get lime juice in your eye.
- Add salt and pepper to taste, starting small and adjusting as necessary.
- Toss gently to combine, ensuring the lime and seasoning reach every corner.
- Drizzle olive oil if desired and serve immediately for best freshness.
Notes
For a heartier salad, consider adding chickpeas or feta. Best consumed fresh within a couple of hours.
