- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 can diced tomatoes with green chilies
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 tablespoon taco seasoning
- 1 cup tortilla chips, crushed
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine shredded chicken, black beans, corn, diced tomatoes, salsa, taco seasoning, and half of the cheese.
- Mix well and season with salt and pepper to taste.
- In a greased baking dish, spread the chicken mixture evenly.
- Top with crushed tortilla chips and the remaining cheese.
- Bake in the preheated oven for 30 minutes or until the cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
Notes
Ensure to preheat the oven and avoid adding too much salsa to prevent sogginess. Can be customized with various ingredient swaps.
