Mexican Street Corn and Black Bean Quesadillas

Ingredients
4 flour tortillas
1 cup cooked black beans, drained and rinsed
1 cup corn kernels
1/2 cup crumbled queso fresco or feta
1/2 cup shredded cheese (cheddar or Monterey Jack)
1/4 cup cilantro, chopped
1 tsp chili powder
1 tsp cumin
Salt and pepper, to taste
Olive oil or butter, for cooking

Instructions
In a mixing bowl, combine black beans, corn, queso fresco, shredded cheese, cilantro, chili powder, cumin, salt, and pepper. Mix gently.
Heat a skillet over medium heat and add olive oil or butter.
Place one tortilla in the skillet and spoon a portion of the filling onto one half of the tortilla.
Fold the tortilla over to cover the filling and press down lightly.
Cook for about 2-3 minutes on each side until golden brown and cheese melts.
Repeat with remaining tortillas and filling. Keep warm if necessary.
Slice and serve warm.

These quesadillas are forgiving and can be customized with different ingredients based on what you have on hand.
