- 4 flour tortillas
- 1 cup cooked black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup crumbled queso fresco or feta
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup cilantro, chopped
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper, to taste
- Olive oil or butter, for cooking
Instructions
- In a mixing bowl, combine black beans, corn, queso fresco, shredded cheese, cilantro, chili powder, cumin, salt, and pepper. Mix gently.
- Heat a skillet over medium heat and add olive oil or butter.
- Place one tortilla in the skillet and spoon a portion of the filling onto one half of the tortilla.
- Fold the tortilla over to cover the filling and press down lightly.
- Cook for about 2-3 minutes on each side until golden brown and cheese melts.
- Repeat with remaining tortillas and filling. Keep warm if necessary.
- Slice and serve warm.
