Ingredients

  • 3 cups cooked chicken, shredded or cubed
  • 2 cups frozen mixed vegetables, thawed slightly
  • 1 can condensed cream of chicken or mushroom soup
  • 1 cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup crushed buttery crackers or breadcrumbs
  • 2 tablespoons melted butter
  • Optional extras: chopped green onion, a splash of hot sauce, cooked bacon pieces, or breadcrumbs mixed with parmesan

Instructions

  1. Preheat your oven to 350°F and grease your baking dish.
  2. In a big bowl, combine the soup, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  3. Stir in the cooked chicken and thawed vegetables. Add half the cheese and mix again.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. In a small bowl, mix crushed crackers or breadcrumbs with melted butter and sprinkle over the casserole. Add the remaining cheese on top.
  6. Bake for 25 to 30 minutes until bubbly and golden. Check at 20 minutes if unsure.
  7. Let it rest for 5 minutes before serving.

Keep shredded rotisserie chicken in the freezer for quick prep.
