No Bake Peanut Butter Energy Bites

Description

Quick and easy no bake peanut butter energy bites that are perfect for a tasty snack on the go.


Ingredients

Scale
  • 1/2 cup quick oats
  • 1/4 cup peanut butter
  • 2 tablespoons honey
  • 1/4 cup mini chocolate chips

Instructions

  1. Combine oats and chocolate chips in a medium bowl and stir until evenly mixed.
  2. Add peanut butter and honey; stir until well combined and scrape the sides of the bowl.
  3. Scoop mixture into 12 balls and roll between your hands, pressing gently to compact them.
  4. Store in an airtight container at room temperature or chilled. They last a few days at room temperature and up to two weeks chilled.

Notes

If the mixture feels too dry, add a splash of water or another teaspoon of peanut butter. If it feels too sticky, chill the bowl for a few minutes before rolling.
