One-Pan Honey Garlic Kielbasa & Veggies: Easy Family Delight

Ingredients

  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic (minced)
  • 2 tablespoons Soy Sauce
  • 1 each Bell Peppers (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Preheat your oven to 425 degrees F. Line a rimmed baking sheet with foil or parchment for easier cleanup. Toss the potatoes with 1 tablespoon olive oil and a pinch of salt. Roast for 15 minutes to give them a head start.
  2. While the potatoes roast, slice the kielbasa into 1/2 inch rounds and chop the bell peppers into bite sized pieces. Mince the garlic.
  3. In a small bowl, whisk together the honey, soy sauce, minced garlic, and remaining 1 tablespoon olive oil.
  4. Remove the tray from the oven and add the kielbasa, bell peppers, and baby carrots. Toss everything to mix then pour the honey garlic mixture evenly over the top.
  5. Spread everything out in a single layer and return to the oven. Roast for 12 to 18 minutes until the kielbasa browns a bit and the vegetables are tender.
  6. When it is ready, sprinkle with chopped parsley or green onions. Serve hot straight from the pan.
