Description
A quick and easy one-pan honey garlic kielbasa and veggies dish that comes together in no time with minimal cleanup.

- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic (minced)
- 2 tablespoons Soy Sauce
- 1 each Bell Peppers (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Preheat your oven to 425 degrees F. Line a rimmed baking sheet with foil or parchment for easier cleanup. Toss the potatoes with 1 tablespoon olive oil and a pinch of salt. Roast for 15 minutes to give them a head start.
- While the potatoes roast, slice the kielbasa into 1/2 inch rounds and chop the bell peppers into bite sized pieces. Mince the garlic.
- In a small bowl, whisk together the honey, soy sauce, minced garlic, and remaining 1 tablespoon olive oil.
- Remove the tray from the oven and add the kielbasa, bell peppers, and baby carrots. Toss everything to mix then pour the honey garlic mixture evenly over the top.
- Spread everything out in a single layer and return to the oven. Roast for 12 to 18 minutes until the kielbasa browns a bit and the vegetables are tender.
- When it is ready, sprinkle with chopped parsley or green onions. Serve hot straight from the pan.
