One-Pan Honey Garlic Kielbasa & Veggies: Easy Family Delight

Ingredients
1 pound Kielbasa
2 tablespoons Honey
3 cloves Garlic, minced
2 tablespoons Soy Sauce
1 each Bell Pepper (red & yellow)
1 cup Baby Carrots
1 pound Baby Potatoes
2 tablespoons Olive Oil
2 tablespoons Fresh Parsley or Green Onions

Instructions
Preheat
your oven to 400 F.
Wash
the baby potatoes and halve them.
Slice
the kielbasa into 1/2 inch rounds.
Cut
bell peppers into roughly 1 inch pieces and halve the baby carrots.
Mix
honey, minced garlic, soy sauce, and the remaining olive oil in a bowl.
Spread
potatoes on a baking sheet and roast for about 15 minutes.
Pull
the sheet out, add kielbasa, bell peppers, and carrots.
Drizzle
the sauce over everything and toss with tongs.
Spread
everything into a single layer and return to the oven for 15 to 20 minutes.
Sprinkle
with parsley or green onions and give a gentle toss.
Serve
right away over rice or directly from the pan.
Notes
For variation, try using smoked sausage or chicken. Add red pepper flakes for some heat.
