One Pan Honey Garlic Kielbasa and Veggies

Description

A simple and delicious one pan meal with kielbasa, roasted vegetables, and a sweet honey garlic sauce that caramelizes beautifully.


Ingredients

  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce
  • 1 each Bell Pepper (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Preheat your oven to 400 F.
  2. Wash the baby potatoes and halve them.
  3. Slice the kielbasa into 1/2 inch rounds.
  4. Cut bell peppers into roughly 1 inch pieces and halve the baby carrots.
  5. Mix honey, minced garlic, soy sauce, and the remaining olive oil in a bowl.
  6. Spread potatoes on a baking sheet and roast for about 15 minutes.
  7. Pull the sheet out, add kielbasa, bell peppers, and carrots.
  8. Drizzle the sauce over everything and toss with tongs.
  9. Spread everything into a single layer and return to the oven for 15 to 20 minutes.
  10. Sprinkle with parsley or green onions and give a gentle toss.
  11. Serve right away over rice or directly from the pan.

Notes

For variation, try using smoked sausage or chicken. Add red pepper flakes for some heat.
