Description
A simple and delicious one pan meal with kielbasa, roasted vegetables, and a sweet honey garlic sauce that caramelizes beautifully.
Ingredients

- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic, minced
- 2 tablespoons Soy Sauce
- 1 each Bell Pepper (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Preheat your oven to 400 F.
- Wash the baby potatoes and halve them.
- Slice the kielbasa into 1/2 inch rounds.
- Cut bell peppers into roughly 1 inch pieces and halve the baby carrots.
- Mix honey, minced garlic, soy sauce, and the remaining olive oil in a bowl.
- Spread potatoes on a baking sheet and roast for about 15 minutes.
- Pull the sheet out, add kielbasa, bell peppers, and carrots.
- Drizzle the sauce over everything and toss with tongs.
- Spread everything into a single layer and return to the oven for 15 to 20 minutes.
- Sprinkle with parsley or green onions and give a gentle toss.
- Serve right away over rice or directly from the pan.
Notes
For variation, try using smoked sausage or chicken. Add red pepper flakes for some heat.
