- 1 lb smoked sausage, sliced
- 12 oz penne pasta, uncooked
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, chopped
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, with juices
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese, for garnish
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced sausage, onion, and bell pepper; sauté until browned, about 5 to 7 minutes.
- Stir in minced garlic and cook for an additional minute.
- Add diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper; bring to a boil.
- Stir in uncooked penne pasta; lower heat and simmer until pasta is tender, 10 to 12 minutes.
- Remove from heat and stir in grated Parmesan cheese until melted.
Notes
Stir occasionally to prevent sticking, and adjust seasoning to taste. Can be adapted for different spice levels and dietary preferences.
