Ingredients

- 1 pound ground turkey
- 1 cup orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 cup spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until softened.
- Add ground turkey, cook until browned.
- Stir in diced tomatoes and chicken broth.
- Bring to a boil, then add orzo and Italian seasoning.
- Reduce heat, cover, and simmer for about 10 minutes or until orzo is cooked.
- Stir in spinach, season with salt and pepper, and cook until spinach is wilted.
- Serve warm.
Notes
Browning the turkey adds depth of flavor. Adjust salt to taste as the broth and tomatoes already contain salt.
