Ingredients
6 large eggs
1/2 cup milk
1 cup mixed fresh veggies (bell peppers, spinach, onions, tomatoes)
1 cup shredded cheese (cheddar or feta)
Salt and pepper to taste
Olive oil or butter for greasing the baking dish

Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, whisk together the eggs and milk until well combined.
Stir in the mixed veggies and cheese. Season with salt and pepper.
Grease a baking dish with olive oil or butter.
Pour the egg mixture into the prepared dish.
Bake in the preheated oven for 25-30 minutes, or until the frittata is set and lightly golden on top.
Remove from the oven and let it cool slightly before slicing. Serve warm.
Notes
This frittata can be made ahead of time and reheated easily. Great for meal prep!
