Ingredients

  • 4 thin chicken cutlets
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1/2 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Prepare chicken by patting cutlets dry with paper towels and seasoning with salt and pepper.
  2. Coat cutlets in flour, dip in beaten eggs, and press into breadcrumb and Parmesan mixture.
  3. Pan fry chicken in heated olive oil for 3 to 4 minutes per side until golden brown.
  4. Make the sauce by melting butter and sautéing garlic, then adding chicken broth, cream, and additional Parmesan.
  5. Combine chicken with sauce in the skillet and let warm together before serving.
  6. Serve with your choice of sides like mashed potatoes or roasted vegetables.
