Parmesan Crusted Chicken Sheet Pan Dinner

Ingredients

  • 4 chicken breasts
  • 1 cup grated Parmesan cheese
  • 2 cups baby potatoes, halved
  • 2 cups green beans, trimmed
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried Italian herbs (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, minced garlic, salt, pepper, and Italian herbs.
  3. Toss the baby potatoes and green beans in the olive oil mixture and spread them on a large sheet pan.
  4. Pat the chicken breasts dry, season with salt and pepper, then coat the tops with grated Parmesan cheese.
  5. Place the chicken on the sheet pan alongside the vegetables.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are golden and tender.
  7. Serve warm and enjoy!

Notes
