Pea Pasta with Lemon, Mint, and Truffle Oil

Any type pasta
Frozen peas
Juice from half a lemon
Lemon zest
Fresh mint leaves
Truffle oil
Good quality olive oil
Salt
Freshly cracked pepper

Instructions
Cook
the pasta according to package instructions.
Add
the frozen peas to the pasta during the last 2 minutes of cooking.
Drain
the pasta and peas, and rinse under cold water if serving as a salad.
Combine
the cooked pasta and peas with lemon juice, lemon zest, olive oil, and truffle oil in a bowl.
Fold
in chopped fresh mint leaves gently.
Season
with salt and pepper to taste.
Add
crumbled goat cheese if desired.
Serve
warm or chill in the refrigerator to serve as a salad.
