Ingredients

- Any type pasta
- Frozen peas
- Juice from half a lemon
- Lemon zest
- Fresh mint leaves
- Truffle oil
- Good quality olive oil
- Salt
- Freshly cracked pepper
- Goat cheese (optional)
Instructions
- Cook the pasta according to package instructions.
- Add the frozen peas to the pasta during the last 2 minutes of cooking.
- Drain the pasta and peas, and rinse under cold water if serving as a salad.
- Combine the cooked pasta and peas with lemon juice, lemon zest, olive oil, and truffle oil in a bowl.
- Fold in chopped fresh mint leaves gently.
- Season with salt and pepper to taste.
- Add crumbled goat cheese if desired.
- Serve warm or chill in the refrigerator to serve as a salad.
