Description
A quick and easy grilled cheese sandwich with gooey mozzarella, basil pesto, and juicy tomatoes, perfect for a fancy meal with minimal effort.

- 4 slices bacon (optional)
- 4 slices sourdough bread
- 2 tablespoons basil pesto
- 4 ounces fresh mozzarella cheese, sliced thick
- 2 vine ripe tomatoes, thinly sliced
- 2 tablespoons butter, softened
Instructions
- If using bacon, add it to a cold skillet. Turn the heat to medium and cook until crispy. Transfer bacon to a paper towel-lined plate and leave grease in the pan.
- Spread 1 tablespoon of pesto on one side of each slice of bread. Layer mozzarella, tomatoes, and bacon (if using) on two slices, then top with the other slices pesto side down.
- Heat the skillet with bacon grease over medium heat. Spread tops of sandwiches with 1 tablespoon of butter and place them in the hot pan butter side down.
- Cook until bread is golden brown, about 3-4 minutes. Spread remaining butter on top and flip, cooking for another 2-3 minutes until toasted and cheese is melted.
- Remove sandwiches from the pan, let cool for 1-2 minutes, then cut in half and serve immediately.
Notes
For a crunchier sandwich, press down gently with a spatula while cooking.
