Ingredients

  • 1 ripe pineapple, diced
  • 2 cucumbers, diced
  • 1 lime, juiced
  • 1 tablespoon honey or agave syrup
  • Salt to taste
  • Fresh mint leaves, optional, for garnish

Instructions

  1. Combine the diced pineapple and cucumbers in a large bowl. Toss gently.
  2. Whisk together the lime juice and honey in a small bowl until the honey dissolves.
  3. Pour the dressing over the pineapple and cucumber, stirring gently.
  4. Season with salt to taste, adding slowly and tasting as you go.
  5. Garnish with fresh mint leaves if desired.
  6. Serve immediately or chill before serving.

Notes

  1. Keep the dressing light and avoid overdressing the salad. Add cucumbers right before serving to maintain crunch.
