Ingredients

  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup + 2 tablespoons sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha
  • 4 cups coleslaw mix

Instructions

  1. Cook noodles; set aside. Boil the wide Lo Mein according to package directions, drain, rinse under cool water, and toss with sesame oil.
  2. Brown pork with 1/4 cup green onions in peanut oil. Heat a large skillet over medium-high heat, add peanut oil, add pork, and cook until browned.
  3. Whisk together broth, mirin, soy sauce, garlic, ginger, sesame oil, and sriracha in a bowl.
  4. Add noodles, coleslaw mix, and sauce to the skillet. Toss everything together.
  5. Cook for 2-3 minutes until coated, allowing noodles and slaw to soften and absorb the sauce. Garnish with remaining green onions.

Notes

  1. For a vegetarian option, swap pork for firm tofu. Can be made meal-prep friendly by keeping sauce separate until reheating.
