Ingredients

  • 1 lb chicken, diced or shredded, or 1 lb ground beef
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 cup rice or pasta (optional)
  • Salt and pepper to taste
  • Spices (garlic powder, Italian seasoning, or taco seasoning)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken or ground beef, cream of mushroom soup, mixed vegetables, and rice or pasta if using. Mix well.
  3. Season with salt, pepper, and any additional spices. Adjust seasoning to taste.
  4. Transfer the mixture to a greased baking dish and sprinkle cheese on top.
  5. Cover with foil and bake for 25-30 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  6. Let cool slightly, serve, and enjoy!

Notes

  1. This casserole can be made ahead and refrigerated, just add extra bake time if going in cold. Great for leftovers!
