Quick and Easy Enchiladas

Ingredients

  • 4 flour tortillas
  • 2 cups cooked chicken, shredded or chopped
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar, monterey jack, or a mix)
  • Sour cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the cooked chicken and half of the enchilada sauce.
  3. Fill each tortilla with the chicken mixture, roll them up, and place seam-side down in a baking dish.
  4. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  5. Bake in the preheated oven for 20 minutes or until the cheese is bubbly.
  6. Serve with sour cream.

Notes

  1. Warm tortillas before rolling to prevent cracking. This recipe is flexible; feel free to substitute proteins and sauces.
