Roasted Garlic Cheesy Bread

Ingredients
1 loaf Italian bread
2 sticks unsalted butter
2 bulbs fresh garlic
1 tablespoon parsley
1 teaspoon Italian seasoning
1 tablespoon honey
1 cup gouda or cheddar cheese
1 cup mozzarella cheese

Instructions
Preheat your oven to 400°F. Slice the top off a whole bulb of garlic, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until golden.
Let the garlic cool slightly, then squeeze out the cloves into a bowl and mash.
Soften the butter, then mix in the mashed garlic, Italian seasoning, honey, parsley, and salt to create compound butter.
Preheat the oven to 375°F. Slice the Italian bread in half, lay cut side up on a baking sheet.
Spread the compound garlic butter generously on both halves of the bread.
Top with gouda or cheddar cheese, and sprinkle mozzarella on top.
Bake for 15 minutes until the cheese is melted and edges are browned.
Broil for 2 minutes until bubbly and golden brown. Monitor closely to prevent burning.
Let cool briefly before slicing and serving warm.
