Roasted Garlic Potato Soup

Ingredients

  • 4 large potatoes, peeled and cubed
  • 1 head of garlic, roasted
  • 1 onion, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Olive oil
  • Chives or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent.
  2. Add the cubed potatoes and roasted garlic to the pot. Toss for a minute.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 to 20 minutes.
  4. Use an immersion blender to blend the soup until smooth.
  5. Stir in heavy cream and season with salt and pepper. Heat gently, do not boil.
  6. Serve hot, garnished with chives or parsley.

Notes

  1. Substitute heavy cream with coconut milk for a vegan version.
