Roasted Potatoes with Baked Feta and Garlic

Ingredients

  • 2 pounds potatoes, cubed
  • 1 block feta cheese
  • 5 cloves garlic, unpeeled
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons honey
  • Fresh herbs like thyme or rosemary for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cubed potatoes with olive oil, salt, and black pepper until well coated.
  3. Spread the potatoes on a baking sheet in a single layer and add the garlic cloves.
  4. Place the block of feta cheese in the center of the baking sheet.
  5. Roast in the preheated oven for about 30-35 minutes or until the potatoes are golden and crispy.
  6. In the last 5 minutes of cooking, drizzle honey over the feta cheese.
  7. Remove from the oven, and let it cool for a few minutes.
  8. Squeeze the roasted garlic out of its skins and mix it with the potatoes and feta.
  9. Garnish with fresh herbs before serving.

Notes

  1. For a creamier texture, buy a sturdy block of feta instead of crumbly feta. Alternatives for potatoes include sweet potatoes, and other cheese options are halloumi or goat cheese.
