In a large bowl, toss the cubed potatoes with olive oil, salt, and black pepper until well coated.
Spread the potatoes on a baking sheet in a single layer and add the garlic cloves.
Place the block of feta cheese in the center of the baking sheet.
Roast in the preheated oven for about 30-35 minutes or until the potatoes are golden and crispy.
In the last 5 minutes of cooking, drizzle honey over the feta cheese.
Remove from the oven, and let it cool for a few minutes.
Squeeze the roasted garlic out of its skins and mix it with the potatoes and feta.
Garnish with fresh herbs before serving.
