- 2 pounds potatoes, cubed
- 1 block feta cheese
- 5 cloves garlic, unpeeled
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons honey
- Fresh herbs like thyme or rosemary for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the cubed potatoes with olive oil, salt, and black pepper until well coated.
- Spread the potatoes on a baking sheet in a single layer and add the garlic cloves.
- Place the block of feta cheese in the center of the baking sheet.
- Roast in the preheated oven for about 30-35 minutes or until the potatoes are golden and crispy.
- In the last 5 minutes of cooking, drizzle honey over the feta cheese.
- Remove from the oven, and let it cool for a few minutes.
- Squeeze the roasted garlic out of its skins and mix it with the potatoes and feta.
- Garnish with fresh herbs before serving.
Notes
For a creamier texture, buy a sturdy block of feta instead of crumbly feta. Alternatives for potatoes include sweet potatoes, and other cheese options are halloumi or goat cheese.
