Ingredients
Pork chops, bone-in or boneless, about 1 inch thick
Potatoes, Yukon gold or red, cut into wedges or cubes
Olive oil, enough to coat everything
Garlic powder
Paprika, sweet or smoked
Salt
Black pepper, freshly cracked
Rosemary, optional

Instructions
Preheat the oven to 400°F (200°C).
Cut the potatoes into wedges or cubes.
In a bowl, toss the potatoes with olive oil, garlic powder, paprika, salt, and pepper.
Place the seasoned potatoes on a sheet pan.
Season the pork chops with salt, pepper, and any other desired seasonings.
Add the pork chops to the sheet pan with the potatoes.
Roast in the preheated oven for about 25-30 minutes or until the pork reaches an internal temperature of 145°F (63°C) and the potatoes are golden and crispy.
Optionally garnish with rosemary before serving.
Notes
Ensure the potatoes are cut uniformly for even cooking. Store leftovers in an airtight container and reheat in the oven for best results.
