Ingredients
- Pork chops, bone-in or boneless, about 1 inch thick
- Potatoes, Yukon gold or red, cut into wedges or cubes
- Olive oil, enough to coat everything
- Garlic powder
- Paprika, sweet or smoked
- Salt
- Black pepper, freshly cracked
- Rosemary, optional
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the potatoes into wedges or cubes.
- In a bowl, toss the potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Place the seasoned potatoes on a sheet pan.
- Season the pork chops with salt, pepper, and any other desired seasonings.
- Add the pork chops to the sheet pan with the potatoes.
- Roast in the preheated oven for about 25-30 minutes or until the pork reaches an internal temperature of 145°F (63°C) and the potatoes are golden and crispy.
- Optionally garnish with rosemary before serving.
Notes
Ensure the potatoes are cut uniformly for even cooking. Store leftovers in an airtight container and reheat in the oven for best results.
