2 chicken breasts, diced
2 medium zucchinis, sliced
2 tablespoons olive oil
3 cloves garlic, minced
1 bell pepper, sliced
Soy sauce to taste
Salt and pepper to taste

Heat
olive oil in a large skillet over medium-high heat.
Add
the diced chicken and cook until browned and cooked through, about 5-7 minutes.
Add
the garlic and bell pepper and cook for another 2 minutes.
Stir
in the zucchini and cook until tender, about 3-4 minutes.
Season
with soy sauce, salt, and pepper.
Serve
over cooked rice.
Notes
